Blue Crab Size Guide: What Colossal, Jumbo, and Large Actually Mean

Walk up to a crab stand and you'll see signs for "#1 Jumbos" or "Large #2s." If you don't know what those grades mean, you might end up paying too much — or walking away from a great deal.
How Crabs Are Measured
Crabs are measured point-to-point — the distance between the two outermost spine tips on the shell. Watermen use a wire gauge or ruler, and grading is done by the barrel-full. Sizes can vary slightly between Maryland, Virginia, and Delaware standards, but these ranges are the Chesapeake Bay common standard.
Colossal
Trophy crabs. The biggest you'll find, and usually the first to sell out. If your crab house has them, buy immediately.
Jumbo
The gold standard for a crab feast. Meaty, satisfying, and available throughout the peak summer months. This is what most Maryland crab houses use for their all-you-can-eat nights.
Large (#1)
The everyday workhorse. Most abundant during the season, great value, and still plenty of meat. Buy larges when feeding a crowd on a budget.
Medium (#2 Heavy)
Smaller but more numerous per bushel. Great for kids, great for crab soup, and the best value per pound of meat in most years.
Small (#2 Light)
Early and late season crabs. Less meat per crab but the flavor is just as good. Popular with experienced pickers and for making crab-heavy dishes like Imperial or bisque.
Jimmies vs. Sooks
Beyond size, crabs are also gendered. Jimmies (males) tend to have more claw meat and a slightly firmer texture. Sooks (females) have sweeter, often more tender body meat, and in summer you may find roe (crab eggs) which some consider a delicacy. Most sellers don't separate them, but it's worth asking your waterman.
Best Size for the Best Value
If you want the most meat per dollar, buy Larges. Jumbos and Colossals cost more per crab but don't yield proportionally more meat — you're partly paying for size prestige. For a crowd of 6+ people, buy a full bushel of larges. You'll have more crabs, more picking, and more fun.
